Taco Fiesta Pie

Prep 20 minutes
Ready in 30 minutes

1 (15 0z) pkg Pillsbury Refrigerated Pie Crust

1 lb. ground beef (ground turkey or ground chicken works, too)

1 cup shredded lettuce
1/2 cup chopped tomato

Optional: green onion slices, sour cream,
ripe olives, chopped jalapeƱos.

1. Unfold pie crust; place in 9-inch pie pan. Prick bottom and sides wit fork;flute edge. Cut 13 (1-inch) triangle pieces from remaining crust; place around crust edge. Bake at 425 degrees for 9-11 minutes or until light golden-brown.

2. In large skillet, brown ground beef; drain. Add chili beans, salsa and 1 cup cheese; mix will. Cook over low heat for 2 to 3 minutes or until cheese is melted.

  1. Hello! I noticed in UKOK's comments box that you were from Indiana too! I'm from Bloomington!
I don't have a blog anymore, but I used to and that is how I know Deb in UK. I also see you are on retreat at St. Meinrad's. I've been there too, but not on an actual retreat. Someday, but I loved it peaceful outside and many I know are Benedictine Oblates...I am a Cursilista..perhaps one day I may look into being an Oblate...we'll see. Anyway, my name is Suzanne McConnell and I attend St. Charles parish. If you are ever in our area, look me up! I love your blog, btw! :) Peace of Christ, Suzanne
    If you are ever in

  2. Suzanne, thank you for visiting. I actually have two children who live in INDY. Marianne lives in Broadripple and attends St. Thomas Aquinas and Wes, Annie and the girls go to St. Suzanna's in Plainfield. So glad to meet you!

  3. Oh, this is so right up our alley! Looks delicious! We'll be trying this one out for sure, Cathy! Thanks!
